What’s better than eating bacon in front of a vegetarian? Eating Dallas Cowboys brand bacon in front of your die-hard Dallas Cowboys fan vegetarian husband. Even better than that? Eating the bacon in the form of Dark Chocolate Bacon Cupcakes.

Let me repeat that for you.

Dark Chocolate Bacon Cupcakes. 

On Saturday, after the Great Cloth Diaper Change and the Main St. Arts Festival, Hubby and I stopped by H-E-B to do our grocery shopping for the week and pick up some Petit Jean Cowboys branded bacon. You can see our entire trip by checking out my Google+ photo album story here.

Yesterday morning, I started cooking the bacon. It cooked so well. Normally my bacon curls like crazy and cooks really unevenly, but I didn’t have that problem with this bacon at all. Check it out:

I was going to make Dark Chocolate Bacon Cupcakes but I ran out of time before we had to leave to meet the real estate agent. So, I tossed the cooked bacon in the fridge and I finally got a chance to make the cupcakes last night.

Here’s the recipe that I used:

Ingredients:

  • 15 slices bacon, pre cooked and crumbled
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups white sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 eggs
  • 1 cup cold brewed coffee
  • 1 cup buttermilk
  • 1/2 cup coconut oil
  • 1 batch of chocolate frosting
Instructions:

Preheat oven to 375 degrees F. 

In a large bowl (or Kitchen Aid), stir together the flour, cocoa powder, sugar, baking soda, baking powder and salt until well-mixed.
Pour in the eggs, coffee, buttermilk and oil. Stir until blended. Mix in 3/4 of the bacon.
Spoon the batter into prepared cups, dividing evenly.
Bake in the preheated oven until the tops spring back when lightly pressed, about 20 minutes. Remove cupcakes from pan to cool. When completely cool, frost with your favorite chocolate frosting and sprinkle reserved bacon crumbles on top.  
I was planning on making chocolate buttercream frosting but with the crazy hectic weekend we had, I just didn’t have time. I got a container of regular chocolate frosting from Walmart when I was picking up pine shavings for the kitchen and I whipped it until it was nice and fluffy. It worked out great!
Last night, Hubby’s cousin Shawn stopped by and tried one and loved them. Today I took some to my pregnant friend Melissa and her husband. The verdict is in – they loved them too. I definitely have a new favorite dessert to bring to gatherings. If you make them, please come back and let me know what you think!
